What do commercial airline pilots do for the majority of a 14 hour flight?

Due to the limits of how long they can fly on a long leg, they rotate crews. For example, a crew will take two, three-hour breaks for rest. Enroute over water, they will monitor the route, check in on the radio, divert around weather and look for smooth air. One hour for climb out and descending,you are pretty busy with checks and so forth.
